North Dakota: Agraria Restaurant Is Doing Well
Published by gwen October 5th, 2007 in Agriculture, Beyond North Dakota, Business, Uncategorized.About sixteen months ago, the first Agraria restaurant opened in Washington, D.C. Now the company is looking to open a second restaurant, also in the capitol city, to showcase family farmers and help give them more of the food dollar.
According to Tom Prescott, regional project manager with Agraria, the concept began with the North Dakota Farmer’s Union. After looking at other options, the parent company (Agraria LLC–a North Dakota based holding company) decided on a restaurant. They kept it elegantly modern but added warm rural touches like wood accents and artwork.
High-profile clients including congressmen and diplomats are drawn to the restaurant because it is unique, Prescott said. Rather than relying on middlemen for supplies, the chef only uses products that are direct-sourced from American family farmers. North Dakota Branded Beef and North Dakota milled flour are some of the products Agraria uses.
The menu changes with the season and what farmers have available. Check out the spotlight on the Business and Technology page for more information on Agraria.
